Need Ideas for a Seniors Billiards Tournament

I work at a retirement home for mid 80's seniors and an idea for an activity was a small billiards tournament (we have 1 table). Now if we get 10 people, it would be a huge success, and some have played before and some haven't. The rules need to be fairly simple, with me moderating each game of course. I don't want the games to go on too long either. Anybody have any ideas?

I was thinking maybe a game of cutthroat with teams, so that everybody is playing, and then as the teams get eliminated, break the teams apart for individuals with the final game of three people.

Any ideas are appreciated!
